Cashew Banana Bread Recipe: Moist Homemade Banana Bread with Nuts

Do you have overripe bananas waiting in your kitchen? You can turn them into a delicious loaf of Cashew Banana Bread, combining the sweetness of mashed bananas with the satisfying crunch of cashew nuts.

This easy homemade banana bread recipe uses flour, oatmeal, egg, vanilla and melted butter to create a comforting baked treat. Chopped cashew nuts add extra texture and a delicious nutty flavour to every slice.

Enjoy it for breakfast, as an afternoon snack or alongside a warm mug of Cashew Hot Chocolate.

Ingredients

  • ½ cup chopped Gourmet Cashews

  • 1 bunch of ripe bananas

  • 1 cup all-purpose flour

  • ½ cup oatmeal

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda

  • ¼ cup melted butter

How to Make Cashew Banana Bread

1. Preheat the Oven

  • Preheat your oven to 160°C.
  • Lightly grease a loaf tin with oil and set it aside.

2. Mash the Bananas

  • Peel the bananas and place them in a large mixing bowl.
  • Mash thoroughly with a fork until smooth.

3. Add the Wet Ingredients

  • Add the egg, melted butter and vanilla extract to the mashed bananas.
  • Mix thoroughly until the ingredients are well combined.

4. Add the Dry Ingredients

  • Sift the flour and baking soda into the banana mixture.
  • Add the oatmeal and chopped Gourmet Cashews.

5. Mix Gently

Fold the ingredients together until the flour has just disappeared and everything is evenly combined.

Avoid overmixing. Mixing too much can make the finished banana bread dense rather than tender.

6. Transfer to the Loaf Tin

Pour the batter into the greased loaf tin and spread it evenly.

7. Bake

  • Bake at 160°C for approximately 45 minutes, or until a toothpick inserted into the centre comes out clean.

If the centre needs more time, continue baking in short intervals and check again.

  • Allow the bread to cool before removing it from the tin and slicing.

How to Serve Cashew Banana Bread

This homemade banana bread is delicious:

  • Warm or at room temperature

  • With tea or coffee

  • Alongside Cashew Hot Chocolate or other chocolate drink

Tips for Baking Perfectly Moist Cashew Banana Bread

  • Use very ripe bananas. Bananas with plenty of brown spots are usually sweeter and easier to mash.
  • Chop the cashews evenly. Smaller pieces distribute more consistently throughout the loaf.
  • Don't overmix. Fold the batter only until the dry ingredients are incorporated.
  • Check the centre. Ovens vary, so use the toothpick test to check whether the loaf is done.
  • Cool before slicing. Allowing the loaf to rest helps it set and makes slicing easier.

A Delicious Way to Bake with Gourmet Cashews

Cashews bring a gentle, buttery flavour and satisfying texture to baked goods. In this banana bread, they complement the sweetness of ripe bananas and the hearty texture of oatmeal. This makes an easy recipe to have handy whenever you want to bake something familiar with a nutty twist.
