These chicken skewers with a twist make a memorable party appetiser, a protein-packed addition to lunch or dinner, or a satisfying meal paired with spicy cashew yamarita.

Ingredients

  • 1 cup crushed Gourmet Cashews

  • 1 kg chicken breasts

  • 2 tablespoons honey

  • Salt, to taste

  • Black pepper, to taste

  • 12 wooden skewers

  • 3 eggs

  • 1 cup all-purpose flour

  • 3 cups vegetable oil, as listed in the original recipe

Note: The original method specifies baking the chicken in the oven and does not use the vegetable oil. The oil is therefore not included in the baking instructions below.

How to Make Honey Nut Chicken Skewers

1. Prepare the Skewers

  • Soak the wooden skewers in water for 15 minutes to help prevent them from drying out in the oven.
  • Preheat your oven to 180°C.

2. Cut the Chicken

  • Slice the chicken breasts into thin strips.
  • Thread two strips of chicken onto each skewer, arranging them evenly to help the chicken cook consistently.

3. Add Honey and Seasoning

  • Brush both sides of the chicken with honey.
  • Season with salt and black pepper to taste.

4. Prepare the Coating

Set out three separate bowls.

  • Bowl 1: Add the flour and season with salt and black pepper.

  • Bowl 2: Whisk the eggs and season lightly.

  • Bowl 3: Add the crushed Gourmet Cashews.

5. Coat the Chicken

  • Dip each chicken skewer into the seasoned flour, then into the whisked eggs.
  • Finally, roll the chicken in the crushed Gourmet Cashews until the surface is evenly coated. Press the cashew pieces gently onto the chicken to help them stick.

6. Arrange on a Baking Rack

Arrange the coated chicken skewers on an oven-safe rack, with a baking tray underneath to catch any drips.

Leave space between the skewers to encourage even cooking.

7. Bake

Bake at 180°C for approximately 20 minutes, checking that the chicken is thoroughly cooked before serving.

Cooking time will vary depending on the thickness of the chicken strips. The safest approach is to check that the thickest part reaches an internal temperature of 74°C.

Allow the skewers to rest briefly before serving.

What to Serve with Honey Nut Chicken Skewers

These cashew-crusted chicken skewers pair well with:

  • Spicy Cashew Yamarita for a crunchy, savoury meal

  • Sauces, ketchup or your favourite dips

  • Fresh vegetable salad

  • Rice or other favourite side dishes

  • Party appetisers

Tips for Perfect Cashew-Crusted Chicken

  • Cut the chicken evenly. Similar-sized strips help the chicken cook at the same rate.
  • Crush the cashews appropriately. Small pieces provide a more even coating, while slightly larger pieces add extra crunch.
  • Avoid overcrowding the rack. Space between the skewers encourages more even cooking.
  • Check for doneness. Do not rely on the coating's colour alone. Use a food thermometer to confirm that the chicken reaches 74°C internally.
  • Serve fresh. The cashew coating is at its best shortly after baking.

Why Use Gourmet Cashews in Chicken Recipes?

Gourmet Cashews bring a rich, buttery flavour and satisfying crunch to savoury dishes. When crushed and used as a coating, they offer an alternative to a conventional breadcrumb crust and complement the gentle sweetness of honey.

This recipe is a delicious example of how Gourmet Cashews can be used beyond snacking.
